Wakame is a popular form of edible seaweed in Japan, typically cooked inside miso soup or eaten in other dishes. Wakame is gaining popularity around the globe, ever since the rise of the macrobiotic movement and focus was placed on health benefits from wakame intake. In Minamisanriku, since freshly harvested wakame is served, a shabu-shabu style (Japanese hot pot – quickly soaked in boiling water) of eating is preferred as a delicacy.
